Am I to assume the reason I couldn't find them is because Henry McCABE died, and Mary re-married to James Martin? It would certainly explain why I couldn't find them anywhere.

Thank you so much for your help. I couldn't find a death for Henry either, so I will search some more later as you suggested. I found a baptism for Daniel, and a death for another possible son, James Steven who was born 1866 and died 1867, the year before the other James was born. No baptism found for him or Mary. None of them appear to have died, yet none are with parents in 1881. It's difficult to be sure I have the right parents, as there are quite a few Martins with the same names, but I think I finally got them right, and located them in 61, 71 & 81.
At least with your help I've gone someway to discovering what became of Mary, and for that I thank you very much.

Thank you. I also found those two baptisms, plus burial for James Steven.
I found the following also baptised at St Mary Highfield...
Daniel born 27 Oct 1861, bapt. 3 Nov 1861
Thomas born 13 July 1873, bapt. 15 July 1873
I did not find James born 1868 who was registered 2Q1868, and appears on the 1871 census.
I also found another Thomas born 28 July 1863, bapt. 2 Aug 1863 at Our Lady of Reconcilliation de la Salette, whose mmn was recorded as Burnes, so not sure that one is correct for this family, but I did find his burial in 1866.
There seem to be quite a few James Martin's married to Maria/Mary, that I might be missing them on the 1881 census. I found a James & Mary, that look right, age wise, but they were boarders, and Mary was stated as being a Nurse. None of the children were with them, and I've not found them elsewhere. I searched for a death for Daniel, but nothing found. I need to search again, and maybe widen the field outside of Liverpool, and possibly see if they went to Ireland where James was apparently born.

Bert, thank you once again. I hadn't even checked addresses, so I'm glad you had the foresight to check it. Good to know the first Thomas also belongs, although I'm puzzled why he was baptised in a different church.
I will take another look at census and check out the info you found for a possible Daniel.

I've now found James widowed on the 1881 census at Vauxhall Road, with children, James, Thomas & Mary. They were recorded as MARTON, and James' age was 20 years adrift, due to reading a 5 as a 3. I added corrections to both errors for future researchers benefit. Mary died January 1881 and was buried at St Oswald, where both her parents and stepmother were buried. James died at the same address as his wife, (although a few numbers different to the house number in 1881) in Vauxhall Road in 1890 and was buried at Ford.
Now the next task is to follow the children, see if Daniel eventually saw the error of his ways, and try and determine what happened to Henry McCabe. All of which can be put off for another time.
Right now I'm happy to have found this much, that might have taken a lot longer without your input.

I have one further update.
James Martin & Mary/Maria McCabe were married at St Peters Priory, on either 25th or 28th December 1860. Actual date was difficult to determine, but at least we now know they did marry.
