Paul, it may well be that John was a baptismal name which would not be on the registration. Therefore it wouldn't be on his birth cert either. So when he came to marry he would normally have to use his birth name, although he might have preferred to be known as John.
I have a g.father whose birth cert says his forename was plain James. He had 4 sons. On my father's birth cert he is James Francis. On another he is James Thomas, on another he is James Francis Thomas and on the 4th son's birth cert he is just James! When I was finally able to check his baptism, there it was... James Francis Thomas.
As we have previously found there isn't a Sarah Jones to John Turton marriage in England and Wales. But she may have married twice. Only her marriage cert or the birth cert for one of the children will be able to tell you that because there are too many Sarah Jones marriages. A search for the sons would have to be done elsewhere.

Your William was born in 1900 and was approx 13 when his grandfather died yes?
Grandpa was 49 in 1901 census if I have the right person.
There's a death for Wm Lee in march qtr 1912 W Dby aged 59yrs.
Had a look in the census following 1901, too many to pinpoint, sorry.
