Hastings/Eastham/Easton/Austin family

I have a phonetic mystery. I am attempting to trace the ancestry of my surname, Hastings. I have discovered however that my surname only became standardised as Hastings once the family emigrated to Canada. No one in the family could read or write, so the people making the baptism, marriage and death records wrote down what they heard, and what they heard seems to have varied.
My third great grandfather died as Joseph Hastings in Ontario Canada on 2 August 1890. He was born as Joseph Austin on 29 November 1820 and baptised at All Saints in Wigan on 22 April 1821. Her was married (1) as Joseph Eastham to Mary Gibson at All Saints in Wigan on 2 July 1843. She died in childbirth the following year on 9 January 1844 and Joseph then married Elizabeth Mather, this time as Joseph Easton, on 31 January 1845, at St Nicholas Church, Liverpool. They then had Mary Ann (Eastham), Joseph (Eastham), John (Hasting) and William before emigrating to Canada around 1854.
Joseph's records name his father as Humphrey and his mother as Mary. There is a Humphrey Eastham born 23 July 1800, baptised 24 August 1800, at All Saints in Wigan. On 3 April 1820 he married Mary Greenhalgh in Wigan as Humphrey Austin.
Finally, I have Humphrey's father Joseph Eastham marrying Ann Green, daughter of Humphrey and Mary Green, on 25 November 1799, ant St Aidan's Church, Billinge.
I would like help in taking this further. I'm pretty sure I have the surnames phonetically linked through corroborating evidence of census records and the like. I would especially like help in pushing back the Hastings/Eastham/Easton/Austin surname, and would be very interested to know if I have relatives who may already have done this.
