Irish ancestors - Guidance please

My great grand father, John Redding, was married in Liverpool in 1860.
From his marriage certificate, His father's name was George, who was a farmer.
John was born in Ireland, according to two of the English census records.
Another census says England
I am fairly sure that the family were Protestant, as John was married in a CofE church in Liverpool.
I guess that the way forward would be to get a baptism cert for John which has a father's name included.
Am I approaching this logically, or have I got it wrong??
Are there any other avenues I could consider??

The place name could be something like Derrygreenagh. Derry comes Doire. Roots Ireland have only a couple of possible matching baptisms for a John Redding: 1839 (County Cork) and 1840 (County Limerick) but neither have a father called George.

OK, I've now trawled around three websites looking for clues, perhaps I will make a suggestion that helped me once.
Somewhere you state that his occupation is
Deputy Superintendent at the Board of Trade in Liverpool
Look into this,
Could there be any records for the Board of Trade at the Record Office?
Are there any mentions of him in the newspapers?
How did he get the job?
Did he have any promotions in his job?
Perhaps his address is mentioned somewhere in publications
It may not sound likely but I discovered information about an ancestor relating to all of these points and he was a Dock Superintendant.
If you discover any of this information there is a possibility that his date of birth could be given.

Hi Hilary,
Now back from weekend in Chesterfield.
Yes, it sure looks like you've hit the nail on the head!
So now that I know he (and his brother) were born in Donard, Co. Wicklow, I can find a parish and hopefully more info on his father George.
Will get the SoG info on order for John in the next couple of days.
