As far I know the census count only applied to a British flagged vessel when it was berthed or docked in British territorial waters.

I think there was a change later on [at or after 1901] because I seem to recall finding a seaman in a census count on a British naval vessel berthed or actually at sea in the southern Indian Ocean, on route to Australia.

The research guides on the National Archives indicate that there would be some records from that time but you'd need to go to the National Archives to research them as they're not online.

Unfortunately, Esther is shown as a widow in 1881. RG11 - 3587 - 59 - 54.
And Ambrose isn't there because..
